The Menu Extra brigade had the pleasure of organizing four gastronomic evenings at Domaine du Nival from July 27 to 30, 2023. Chefs Francis Blais and Camilo Lapointe-Nascimento presented a twelve-course menu perfectly paired with the wines of the estate located in the village of Saint-Louis, in Montérégie.
After visiting the Pinard & Filles, Les Pervenches and Fragments vineyards, the country-style dinners in the heart of the vineyards organized by Menu Extra are now a true must-see on the Quebec culinary scene.
Nestled on the banks of the Yamaska River, Domaine du Nival, run by the couple Fannie Boulanger and Matthieu Beauchemin, is a benchmark in terms of rigor and responsible viticulture in a booming Quebec wine industry. The approximately three hectares cultivated by the pair produce year after year wines of great precision, with the structure and seriousness that invite good restaurants. In addition to opening their doors for the very first time to such a collaboration, Matthieu and Fannie have drawn from their cellar to offer a few exclusively aged vintages, to the great delight of the guests and the sommelier of Menu Extra, Alexis Demers, who has composed a pairing composed entirely of the estate's wines.
Like all our events in the vineyards, the guests were able to discover this legendary place by walking in the vineyards, discussing the vintage with the winemakers. After the aperitif tasted, the guests walked a few minutes to reach a large marquee where our feverish brigade was waiting.
For a few hours, we had the chance to exercise our passion and create precious memories.
