Easter Feast - The Truffled Cockerel

COUNTRY SOUP WITH SEASONAL VEGETABLES
Peasant soup with fresh vegetables, pieces of heirloom tomatoes, white beans, croutons with olive oil and Parmigiano Reggiano, savory.

COQUELET STUFFED WITH PERIGORD TRUFFLE
Chicken stuffed with smoked bacon, Périgord truffle, and chives, served with rotisserie-style chicken gravy. Accompanied by baby potatoes and roasted mushrooms.

CASTELFRANCO SALAD WITH FERMENTED ROMAINE LETTUCE VINAIGRETTE
Castelfranco and bitter lettuce, fermented romaine lettuce vinaigrette and maple syrup.

CARROT BAVARIAN CREAM
Carrot mousse, grilled carrots, rosemary buttermilk vinaigrette, dill.

MAÎTRE D'HÔTEL BUTTERED GREEN BEANS
Green beans, shallot and white wine butter, parsley.

MAPLE CHÔMEUR PUDDING
Unemployed pudding with maple syrup and Madagascar vanilla.
