Koulibiac Feast

Celebrate Mother's Day by gathering around a beautiful gourmet table! For the occasion, we're bringing back a timeless classic: our famous Salmon Koulibiac.

A magnificent Atlantic salmon fillet is wrapped in a delicate dill salmon and Tuscan cabbage stuffing, all in puff pastry. Served with a white sauce of smoked bones and white wine.

On the menu:

EXTRA CHICKEN AND NOODLE CONSOMMÉ
Poultry consommé, pieces of chicken cooked in broth, noodles and chives.

SALMON KOULIBIAC
Salmon fillet wrapped in a fine stuffing of salmon with dill and Tuscan cabbage, in our pithivier pastry. White sauce with smoked bones and white wine.

DUCHESS POTATOES
Mashed potatoes and egg yolks, golden brown in the oven.

ASPARAGUS SALAD WITH PESTO
Green asparagus dressed with a creamy asparagus and basil pesto.

RASPBERRY AND MAPLE PANNA COTTA
Buttermilk panna cotta, maple-glazed raspberries, raspberry coulis and candied lemon.
